SALT LAKE CITY, January 12, 2016 – After a national search, Cuisine Unlimited Catering & Special Events has been selected to provide exclusive food and beverage services for the new George S. and Dolores Doré Eccles Theater in downtown Salt Lake City, slated for a September 2016 grand opening. Operations will include innovative theater concessions, catering for all events, group meetings and social celebrations in multiple venue sites within the theater, and management of a restaurant, named Encore Bistro at Eccles Theater.

The Encore Bistro will bring a fun and highly professional level of cuisine to Salt Lake’s newest, state-of-the-art performing arts center.”
The executive director of the Cuisine Unlimited operation at Eccles Theater will be Vicki Dunnington. Vicki brings a wealth of experience, having owned her own catering company in Massachusetts for 10 years. Her in-depth professional management experience and thorough knowledge of food and wine provide for a professional, seamless experience for patrons. She enjoys a strong reputation for providing beautifully orchestrated business and social events.
“We are especially excited about the opportunity to operate our own bistro within the venue. We wanted to develop a brand that complements the theater itself. We view the bistro as enhancing the theater, just as an encore does to a show,” says Dunnington. “Encore Bistro is really an extension of what patrons would expect from the Eccles Theater. While they may come for one of the amazing performances, the bistro helps to make it a complete experience.”
Stacey Rosati has been named the executive chef overseeing all food services taking place at the Eccles Theater. Stacey graduated magna cum laude from Johnson & Wales University and has years of culinary experience in various roles, including owning her own café in Driggs, Idaho. Her background suits her well to take on the management of three separate kitchens and a full staff of culinary professionals, an orchestration sure to match the theater experience.
“In designing a menu for the bistro, I am seeking to create ‘accessible contemporary cuisine.’ Since we are located right in the heart of downtown, it is important to meet the needs of business professionals, students from our neighboring technical college, and others enjoying the shopping, arts, and attractions of Salt Lake City,” says Rosati.
Encore will be open for breakfast and lunch, with a focus on providing delicious food options at an affordable price. The menu will feature a variety of sandwiches and salads made with fresh ingredients, as well as daily soups and lunch specials. Dinner will be available on performance nights, with a more formal menu customized to match the current show.
The Cuisine Unlimited team has visited several performing arts centers across the country and is working closely with Salt Lake City, Salt Lake County and the Salt Lake County Center for the Arts in establishing the food and beverage operations at the theater.
